Colorful Lively Sushi Recipe


This raw vegan sushi is not only colorful & lively, but full of flavor thanks to mustard, radish & arugula microgreens (your choice)!

makes 3 rolls


3 pieces untoasted/raw nori

1 mango pitted & chopped

half an avocado pitted & chopped

handful of cherry tomatoes halved

1 c. red, orange & yellow bell peppers chopped

1 carrot shredded or julienned

1 c. fresh Veganic Red Giant Mustard, French Breakfast Radish +/or Roquette Arugula Microgreens


Place a sheet of nori on a cutting board and lay the sliced mango, avocado, cherry tomatoes, bell peppers and carrot on top of one another. Fill only middle portion so that it can be easily wrapped. Layer the mustard, radish +/or arugula microgreens last before starting to roll it into sushi. Really, any microgreens will work but these specifically add depth and spice! To seal, use the mango juice remaining on the cutting board. Use a serrated knife for easy cutting. Simple, nutrient-dense & bursting with flavor!
